If you don’t have a spiralizer in your kitchen, just thinly slice zucchini lengthwise to form spaghetti-like strands. It will take longer but works for the first-timers. I love to make this warm salad/pasta for dinner. 20 min to cook and only 355 cal per serving. Also vegetarian and packed with all good stuff for your body.
Add spiralized zucchini and cook 1-2 min, stirring. Remove from heat, transfer to a salad bowl and set aside.
Add chopped tomatoes to zucchini bowl.
Cut mozzarella into 1/2 cubes, add to the bowl with zucchini.
Add basil leaves and garlic to the bowl.
Add 1/2 tsp. of salt, or to taste
Gently toss to combine and sprinkle with pine nuts.
Serve immediately and enjoy!
Notes
* Make that tomatoes are ripe, it makes a difference. You can use both regular and cherry tomatoes.
