Zucchini Caprese, or Caprese Zoodles

My experience with spiralizer started with this recipe a few years ago.  It has become a staple in our family. If you don’t have a spiralizer in your kitchen, just thinly slice zucchini lengthwise to form spaghetti-like strands.  It will take longer but works for the first-timers.  If you like this recipes and decide to include it into your meal plan, invest in a good spiralizer. It saves a ton of time. You can start with a simple one like this or more advanced by OXO.

Spiralized Zucchini

I love to make this warm salad/pasta for dinner. It is easy to cook, only 355 cals per serving and rich in protein and vitamins. It takes only 20 min to cook also (like most of the recipes from my collection).
